Does anybody know if it is possible to remove the processor head sink in a Intel Desktop Board D525MW ? As a lab for students we want to immerse a motherboard in a fish tank filled with termal oil and remove the head sink for doing thermal engineering and computer architecture experiments.

I don't have this specific board with me, but typically heat sinks can be removed.
On this photo, it looks like there's some sort of plastic rivets.
You may remove it, but not be able to use the rivets again.

Note that even if thermal oil may replace air (at your own risk), you may need to keep the heat sink or find a heat sink adapted to oil dynamics. For the atom core, and the chipset.

Thanks a lot. We will go for it :)
